Traditional Neapolitan flan

Whether you’re planning a romantic dinner or a special gathering, this recipe is ideal for any occasion. It is quick to make and very simple. We recommend that you try this delicacy in the company of a lover of cheesecakes or pies.

Ingredients

  • 6 whole eggs
  • Cream cheese (380 g)
  • 1/2 cup water (110 ml)
  • Zest of 1 lemon (3 g)
  • A can of condensed milk (397 ml)
  • 1 cup evaporated milk (225 ml)
  • 1 cup granulated sugar (about 200 g)

Preparation

  • First take a pie or cake tin. Add the sugar and water and cook on the stove until the sugar melts. When the caramel turns golden brown, it is ready.
  • Avoid stirring this with a spoon so that it does not crystallize. Move the mold back and forth to spread the caramel over the edges. Set this aside for now.
  • Then put the cream cheese, condensed milk, grated lemon zest, eggs and evaporated milk in the blender.
  • Mix all ingredients into a homogeneous mixture. This step can also be done manually using a whisk.
  • Then pour the mixture into the center of your mold with caramel.
  • Place the tin in the oven au bain-marie at 180 degrees until the mixture solidifies and the surface turns golden brown.
  • To prepare something au bain-marie, cover the mold with aluminum foil and place in a larger bowl. Make sure there is enough water in it for the steam to cook the mixture.
  • When the mixture has set, remove it from the oven and cover with a cloth. That way it can cool down and still retain as much moisture as possible.
  • Once cooled, loosen the sides using a knife, and turn over on a platter.
  • Finally, keep in mind that the mold contains moisture, so choose a suitable dish to present your flan.
