1. Turkey, apple and nut salad

Ingredients (2-3 persons)

  • 500 g spinach
  • 2 red apples
  • 150 g mixed nuts
  • 50 g goat cheese
  • 150 g turkey mortadella
  • sweet mustard, black pepper, salt and olive oil for the dressing

Preparation

  • First wash the spinach well. Then put it in a salad bowl and let it sit for a while.
  • Then cut the apple with a julienne cutter. Do not peel the apple.
  • Then prepare the dressing in another bowl. Do this by mixing together the sweet mustard, black pepper, salt and olive oil.
  • Then cut the turkey mortadella into small pieces and sprinkle them over the spinach.
  • Then cut the goat cheese into pieces and sprinkle this over the spinach as well.
  • Pour the dressing over all other ingredients and mix well with the nuts. Enjoy it!

2. Couscous with nuts and red onion

Ingredients (2-3 persons)

  • olive oil
  • 1/2 red onion
  • sea ​​salt
  • 200 g couscous
  • 1 small zucchini
  • 30 g raisins
  • 1 red bell pepper
  • 1 green pepper
  • 400 ml vegetable or chicken stock
  • mix of almonds, peanuts, pistachios, hazelnuts
  • optional: 3 bell peppers, curry, dates, dried peaches and sesame seeds

Preparation

  • Pour the vegetable or chicken stock into a saucepan first and heat it over medium heat.
  • When it starts to boil, add the couscous and a tablespoon of olive oil. Stir slowly, then wait for the couscous to absorb all the stock. For the perfect ratio, use two cups of stock for each cup of couscous. 
  • Once it’s done, remove the pan from the heat and let it cool to room temperature.
  • Wash and peel the zucchini. Then cut the vegetables into small pieces. Do the same with the onion and bell pepper.
  • Heat a frying pan with olive oil over medium heat. Put all the vegetables in this pan to sauté them.
  • Once the onion is well browned, sprinkle the nuts and sea salt over the vegetables. Let this vegetable and nut mixture heat through on a low heat for 2 to 3 minutes. Then remove everything from the fire.
  • Spoon the couscous into a glass dish and add the vegetables and nuts. Then use a spoon to mix all the ingredients together.
  • Then sprinkle the dish with raisins and serve!

3. Zucchini carpaccio with almonds

Ingredients (2 persons)

  • olive oil
  • lemon juice
  • 3 courgettes
  • 250 g Parmesan cheese
  • 150 g sliced ​​almonds
  • salt, black pepper and cayenne pepper

Preparation

  • Peel and wash the courgettes. Then cut the vegetables into slices.
  • Then grate or slice the Parmesan cheese.
  • Mix the lemon juice with the salt, black pepper and cayenne pepper in a small bowl.
  • Place the zucchini slices in a salad bowl. Sprinkle the Parmesan cheese and almonds on top.
  • Pour the seasoned lemon juice into the salad bowl as well and mix all the ingredients well. Serve it right away!
